As a result of the addition of yet another small-batch booze outlet to its ever-growing collection, Dromana’s industrial estate has moved closer to realizing its goal of becoming primarily known as a location for drinking rather than for any other purpose. The doors of Jimmy Rum’s enormous distilling plant as well as its tasting bar are now open.

The new digs are spacious and magnificent, located across a total area of 500 square meters, and they became available to the general public approximately 18 months after the first bottle of Jimmy Rum was made. After a lengthy and successful career as a marine engineer, founder and chief distiller James McPhearson decided to switch gears and start producing craft rum. This project represents his most recent labor of love.

It is the only distillery in Victoria that is solely dedicated to producing rum, and at the moment it is producing four distinct kinds of alcohol: Barbados, the Silver, the Oaked, and the extra strong Navy. They are being produced in a copper still named Matilda that weighs 4.5 tons and holds 1500 liters, but they have a ways to go before they can legitimately be called rum. According to Australian classifications, the base spirit must be aged in wooden barrels for at least two years before it can legitimately be called rum.
Now that it has moved into its new coastal home and gotten things up and running, Jimmy Rum is on a mission to disseminate some serious rum knowledge and, in the process, change a few stereotypes. This is a spirit that should be taken just as seriously as the local gins and whiskies that are all the rage in Australia right now, and McPhearson will be more than willing to demonstrate why that is the case.

You are welcome to enjoy an informative tour of the distillery, have one of the knowledgeable staff members lead you through a sampling, and purchase some rum to take home from the cellar door. You are able to try the whole variety of Jimmy Rum spirits while snacking on toasties or charcuterie at the bar, which is located just a few meters from from the still where they were produced. The staff will walk you through the various ways to taste run, such as sipping it neat, with just a few drops of water, or over ice that has been hand-cut, and then you will have the opportunity to test out your newly acquired knowledge on the two distiller’s specials that are currently being offered. On Saturdays, the venue comes alive with food trucks and a lineup of live music, and there is also a tidy range of rum-fueled classic drinks, such as the Espresso Rumtini and a take on the old fashioned.
